Ingredients
- 1 pound Cheddar cheese (block)
- 1 pound Bacon, thinly sliced at room temp.
- 2 tablespoons Olive oil
- 1 cup All purpose flour
- 2 Eggs
- 1/2 cup Seasoned bread crumbs
Instructions
- Cut the cheese into equal portions, about 2.5cm x 2.5cm
- Wrap two slices of bacon around the cheese, fully enclosing it
- Trim any excess fat, and try to keep the shape tidy
- Chill in the freezer for 5 minutes, don't let them freeze
- Preheat your air fryer to 390F
- Mix the oil and breadcrumbs until loose and crumbly in a bowl
- In a separate bowl beat the eggs
- In a third bowl put the flour
- Now one at a time, cover each cheese and bacon block in, the flour, then the egg, then the breadcrumb mix. Cover well, and press the mixture on to ensure good, firm coverage
- Place the uncooked croquettes into the air fryer basket and cook for 7-8 minutes until golden
