Ingredients
- 100 grams Red pepper
- 100 grams Zucchini
- 100 grams Red onion
- 100 grams Butternut squash
- 1 tablespoon Olive oil
- 1/2 tablespoon Mixed herbs
- Salt and pepper
Instructions
- Peel, half, remove seeds and cut the squash into 2cm cubes.
- Peel and cut the onion into wedges.
- Cut the zucchini into batons.
- Cut the pepper into strips 2cm wide and remove seeds.
- Mix the cut vegetables in a bowl with the herbs and olive oil.
- Preheat air fryer at 200C for 5 mins.
- Once up to temperature, add the coated vegetables to the frying basket and cook for 20-25 mins. Shake the basket regularly to ensure they all cook evenly.
- Once cooked, season with salt and pepper to serve.
