Lemon Muffins from the Air Fryer

You’ll need silicon cups for baking, because a standard cupcake tray won’t normally fit into the an air fryer.

Ingredients

  • 130 grams self-raising flour
  • 1/2 teaspoon baking powder
  • 135 grams butter
  • 100 grams cream cheese
  • 125 grams caster sugar
  • 2 eggs
  • A pinch of salt
  • 2 teaspoons lemon juice

Instructions

  1. Let your butter and cream cheese warm up to room temperature as this will make it all easier. Once soft, cut the butter and cream cheese into small cubes
  2. Preheat your air fryer to 370F
  3. Beat the butter and cream cheese into a light and creamy consistency
  4. Add the caster sugar and beat until the mixture is light and fluffy. This may take a while by hand, 5 minutes or so
  5. Add the eggs one at a time, beating before adding the next, etc
  6. Fold in the flour and salt
  7. Add lemon juice
  8. Spoon the mix into silicon cups
  9. Place the full silicon cups into the basket of your preheated air fryer and cook for 20 minutes at 370F
  10. Check they are cooked through with a tooth pick, if not, cook for a further 3-5 minutes
