You’ll need silicon cups for baking, because a standard cupcake tray won’t normally fit into the an air fryer.
Ingredients
- 130 grams self-raising flour
- 1/2 teaspoon baking powder
- 135 grams butter
- 100 grams cream cheese
- 125 grams caster sugar
- 2 eggs
- A pinch of salt
- 2 teaspoons lemon juice
Instructions
- Let your butter and cream cheese warm up to room temperature as this will make it all easier. Once soft, cut the butter and cream cheese into small cubes
- Preheat your air fryer to 370F
- Beat the butter and cream cheese into a light and creamy consistency
- Add the caster sugar and beat until the mixture is light and fluffy. This may take a while by hand, 5 minutes or so
- Add the eggs one at a time, beating before adding the next, etc
- Fold in the flour and salt
- Add lemon juice
- Spoon the mix into silicon cups
- Place the full silicon cups into the basket of your preheated air fryer and cook for 20 minutes at 370F
- Check they are cooked through with a tooth pick, if not, cook for a further 3-5 minutes
