Chicken Madras (Air fryer Curry)

Ingredients

  • 1 large chicken breast
  • 2 tablespoons dessicated coconut (coconut flakes)
  • 1 tablespoon ground coriander
  • 1 1/2 teaspoons mild curry powder (according to taste)
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 2 tomatoes, peeled and chopped
  • 1 crushed garlic clove
  • 1 medium sized onion chopped
  • 300 milliliters chicken stock.

Instructions

  1. Preheat your air fryer to 360F
  2. Add the diced chicken and half of the olive oil directly into the air fryer basket
  3. Cook for 5 minutes
  4. In a bowl mix the spices and coconut with the remaining olive oil
  5. Add the chopped onion and crushed garlic to the chicken and continue to cook for a further 5 minutes
  6. Add in the mix of spices and coconut
  7. Allow to cook for 10 minutes
  8. Add the tomatoes, chicken stock and cook for a further 5 - 10 minutes
  9. If the curry seems thick, add the necessary additional boiling water

    At stage 2, do you add the chicken directly in the air fryer, or put a bowl inside it?

      You would add the chicken directly into the air fryer basket.
